Bread, Camp Kitchens, and Tabriz
Ottoman food culture stretched from palace kitchens to army cauldrons, where bread, soup, pilaf, and stews sustained both ceremony and campaign. Provisioning was power. On this day in 1514, after the victory at Chaldiran, Selim I entered Tabriz, the Safavid capital. The capture was brief, but it showed how conquest depended not only on steel and horses, but also on the supply systems that fed soldiers, courtiers, and cities alike.
